Corn & Cheddar Mashed Potato Fritters

Once again, I tried a new recipe. The other night, I made barbeque chicken, mashed potatoes, and fresh corn. Yummy! Well, what to do with the leftovers? I looked up and found a recipe here:

So, I set out to try it. I had the corn and the potatoes. I used a mixture of shredded cheese, and I didn't have any green onions, sadly. Still, the fritters were easy to make, and turned out tasting delicious! They heat up a treat too! I took photos during the cook process so you could see them done in a regular kitchen.

I still have leftovers, so I may just make up another batch...
