Last night I made Party Cookies, aka M&M Cookies. I've had this recipe for years, and love making it! The cookies turn out well and are always delicious.
There is some versatility if you want to play with it. Try it with almond extract instead of vanilla. Or dark brown sugar instead of light. Minor changes, but they produce a good cookie. Even play with the decorations. Last night, instead of decorating with more M&M's, I used some coloured, crystallized sugar.
Here's the recipe...
1 cup shortening
1 cup light brown sugar
1/2 cup sugar
2 teaspoons vanilla
2 eggs
2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
3/4 pound M&M's
Blend shortening and sugars. Beat in vanilla and eggs. Add dry ingredients. Stir in M&M's (reserve some if you are decorating with them, or stir them all in and decorate with coloured sugars).
Drop onto cookie sheet (teaspoon size or tablespoon size, depending on how big you want your cookies to be). Bake at 375 degrees for 10 minutes. Let cool a minute before transferring to a wire rack for cooling.
